Five Delicious Desserts For A Summer Day

When the days are hot and long, sometimes the best way to make the most of them is with a tasty summer treat. Whether you enjoy it in the garden or at the dining table, perk up any summer day with one of the following ideas for indulgent, seasonal sweet snacks.

1. Dark chocolate fondue drizzled over fruit kebabs. Pick your favourite summer fruits and collect them all together on a wooden kebab stick. If you actually want to BBQ them then pick fruits like pineapple that will taste delicious and won’t fall off the stick. Otherwise berries, melon and kiwis are a refreshing idea. Create a chocolate fondue with good quality dark chocolate melted down – add a splash of coffee if you’re looking for a dessert that’s a delicious pick me up too.

2. Fruit pops. There’s nothing quite like an ice lolly on a hot day and if they’re bursting with fruit flavour then even better. If you want to get really creative then take two different coloured fruits, such as blueberries and strawberries, mash to a pulp and layer into moulds one colour on top of the other (freeze the bottom layer first to get the stripy effect). For a creamier option use your favourite Ski yogurts to create one of the layers.

3. Smoothies. When you’re looking for something tasty, cooling and sweet a smoothie can hit all the right notes. Use ski yogurts and handfuls of your favourite fruits to make a thirst-quenching dessert drink and add flavours like honey, cinnamon or cocoa powder, or for extra indulgence try throwing some peanut butter into the mix (make sure you only choose one dominant flavour though or you could end up with something rather undrinkable!).

4. No bake cheesecake. Cheesecake is one of those desserts that just goes perfectly with summer and if there’s no baking effort required then even better! Use crushed up butter and digestive biscuits for the base and then top with a mixture of cream cheese, whipped cream, icing sugar and lemon. Keep in the fridge until the topping has set and serve with some juicy berries.

5. Lemon berry trifle. Use sponge fingers or slices of Madeira cake and layer in wine glasses with frozen berries and a mix of soft cheese, yogurt, grated lemon zest and caster sugar. Top with some grated chocolate for an extra indulgence.
